简介:19椒酱是紫金地区客家传统酱料,以大蒜、辣椒为主要原料制作而成。除了作为日常佐餐之用外,广东不少厨师喜欢用紫金椒酱作为烹饪调料,已经将其融入粤菜烹饪体系中。紫金地区客家人生产椒酱的历史悠久,据《紫金县志》记载,“紫金永安牌椒酱,原沈鸿昌辣椒酱,创始于乾隆三十六年”。紫金地区椒酱制作,秉承传统工艺、传统配方,和现代科学技术相结合,经过多年摸索,在完全保留原始风味的基础上,形成一套独特的生产工艺秘方。首先,将挑选好的本地大蒜去皮洗净晒干后,放在大陶缸内加粗盐腌制 120 天到 180 天。至大蒜自然冒油、香味四溢时,放入辣椒、小茴、八角,捞起放入石碓臼搅碎成糊状。然后,装入玻璃罐或陶瓷罐,再加入混合油(花生油、芝麻油)封面即成。用此法生产出的椒酱色泽金红、明亮,是烹饪上选之品。椒酱根植客家民间生活,深受紫金地区群众喜爱。20 世纪六七十年代,作为“紫金三宝” 之一的椒酱多次在中国广州进出口商品交易会上展销,深受海内外顾客,特别是客家人的喜爱。紫金椒酱制作技艺,在保留中原地区的传统饮食文化的基础上,采用传统手工艺,结合本地食材制作而成,是紫金客家人历史、文化的重要载体,为研究紫金社会发展史、传统习俗、客家文化等提供了参考。
英译:Pepper sauce is a traditional Hakka condiment from the Zijin area, made primarily fromgarlic and chili peppers. Besides being used as a daily condiment, many chefs in Guangdong liketo use Zijin pepper sauce as a cooking seasoning, integrating it into Cantonese cuisine. The Hakkapeople in Zijin have a long history of producing pepper sauce. According to the "Zijin CountyAnnals," "Zijin Yong'an brand pepper sauce, originally known as Shen Hongchang chili sauce, was founded in the 36th year of the Qianlong era." The production of pepper sauce in Zijin adheres to traditional craftsmanship and recipes, combined with modern scientific techniques. After years of exploration, a unique set of productiontechniques has been developed while fully preserving the original flavor. First, locally selectedgarlic is peeled, washed, and sun-dried, then placed in large earthen jars with coarse salt forpickling for 120 to 180 days. When the garlic naturally exudes oil and a fragrant aroma, chilipeppers, fennel seeds, and star anise are added, and the mixture is ground into a paste using astone mortar and pestle. Next, it is packed into glass or ceramic jars and mixed with blended oils(peanut oil, sesame oil), then sealed. The pepper sauce produced in this way has a golden-red, bright color and is highly regardedin culinary applications. Pepper sauce is deeply rooted in Hakka folk life and is beloved by the people of Zijin. In the1960s and 1970s, as one of the "Three Treasures of Zijin," pepper sauce was exhibited and sold atthe China Import and Export Commodities Fair in Guangzhou, gaining popularity amongcustomers both domestically and abroad, especially among the Hakka people. The productiontechniques of Zijin pepper sauce, rooted in traditional culinary culture from the Central Plainsregion, utilize local ingredients and traditional craftsmanship. It serves as an important carrier ofZijin Hakka history and culture, offering valuable insights into the social development history, traditional customs, and Hakka culture of Zijin.
