菜系,也称“帮菜”,是指在选料、切配、烹饪等技艺方面,经长期演变而自成体系,具有鲜明的地方风味特色,并为社会所公认的中国饮食的菜肴流派。中国汉族饮食文化的菜系,是指在一定区域内,由于气候、地理、历史、物产及饮食风俗的不同,经过漫长历史演变而形成的一整套自成体系的烹饪技艺和风味,并被全国各地所承认的地方菜肴。早在春秋战国时期,中国汉族饮食文化中南北菜肴风味就表现出差异。到唐宋时,南食、北食各自形成体系。发展到清代初期时,鲁菜、苏菜、粤菜、川菜,成为当时最有影响的地方菜,被称作“四大菜系”。到清末时,浙菜、闽菜、湘菜、徽菜四大新地方菜系分化形成,共同构成中国汉族饮食的“八大菜系”。

鲁菜
鲁菜又名山东菜,形成和发展与由山东地区的文化历史、地理环境、经济条件和习俗尚好有关。山东是我国古文化发祥地之一,地处黄河下游,气候温和,境内山川纵横,河湖交错,沃野千里,物产丰富,文化发达。
特色:选料精细、刀法细腻,注重实惠,花色多样,善用葱姜。
代表菜品:糖醋鱼、锅烧肘子、葱爆羊肉、葱扒海参、锅塌豆腐、红烧海螺、炸蛎黄等。

粤菜
粤菜系由广州菜、潮州菜、东江菜三种地方风味组成。 广州菜包括珠江三角洲和肇庆、韶关、湛江等地的名食在内。地域最广,用料庞杂,选料精细,技艺精良, 善于变化,风味讲究,清而不淡, 鲜而不俗,嫩而不生, 油而不腻。夏秋力求清淡, 冬春偏重浓郁,擅长小炒,要求掌握火候和油温恰到好处。潮汕菜故属闽地,其语言和习俗与闽南相近。
特色:选料广泛,讲究鲜、嫩、爽、滑、浓为主要特点。它主要由广东菜、潮州菜和东江菜组成。
代表菜品:龙虎斗、脆皮乳猪、咕噜肉、大良炒鲜奶、潮州火筒炖鲍翅、蚝油牛柳、冬瓜盅、文昌鸡等。

川菜
川菜系是一个历史悠久的菜系,其发源地是古代的巴国和蜀国。据《华阳国志》记载,巴国“土植五谷,牲具六畜”,并出产鱼盐和茶蜜;蜀国则“山林泽鱼,园囿瓜果,四代节熟,靡不有焉”。当时巴国和蜀国的调味品已有卤水、岩盐、川椒、“阳朴之姜”。在战国时期墓地出土文物中,已有各种青铜器和陶器食具,川菜的萌芽可见一斑。川菜的形成大致在秦始皇统一到三国鼎立之间。
特色:以麻辣、鱼香、家常、怪味、酸辣、椒麻、醋椒为主要特点。
代表菜品:鱼香肉丝,麻婆豆腐,宫保鸡丁,樟茶鸭子等。

湘菜
湘菜系即湖南菜,是以湘江流域、洞庭湖地区和湘西山区等地方菜发展而成。湘江流域的菜以长沙、衡阳、湘潭为中心,是湖南菜的主要代表。其特色是油多、色浓,讲究实惠。在品味上注重香酥、酸辣、软嫩。湘西菜擅长香酸辣,具有浓郁的山乡风味。
特色:以熏、蒸、干炒为主,口味重于酸、辣, 辣味菜和烟熏腊肉是湘菜的独特风味。
代表菜品:麻辣子鸡、辣味合蒸、东安子鸡、洞庭野鸭、霸王别姬、冰糖湘莲、金钱鱼等。

闽菜
闽菜系历来以选料精细,刀工严谨,讲究火候、调汤、佐料,和以味取胜而著称。其烹饪技艺,有四个鲜明的特征,一是采用细致入微的片、切、剞等刀法,使不同质地的原料,达到入味透彻的效果。故闽菜的刀工有“剞花如荔,切丝如发,片薄如纸”的美誉。
特色:制作细巧、色调美观、调味清鲜。
代表菜品:佛跳墙、太极明虾、闽生果、烧生糟鸭、梅开二度、雪花鸡等。

浙菜
浙菜系以杭州、宁波、绍兴三种地方风味菜发展而成,历史也相当悠久。京师人南下开饭店,用北方的烹调方法将南方丰富的原料做得美味可口,“南料北烹”成为浙菜系一大特色。汴京名菜“糖醋黄河鲤鱼”到临安后,以鱼为原料,烹成浙江名菜“西湖醋鱼”。

代表菜品:西湖醋鱼、龙井虾仁、干炸响铃、油焖春笋、西湖莼菜汤等。

苏菜
苏菜系即江苏地方风味菜。江苏是名厨荟萃的地方。我国第一位典籍留名的职业厨师和第一座以厨师姓氏命名的城市均在这里。“菜美之者,具区之菁”,商汤时期的太湖佳蔬韭菜花已登大雅之堂。春秋时齐国的易牙曾在徐州传艺,由他创制的“鱼腹藏羊肉”千古流传,是为“鲜”字之本。
特色:制作精细,因材施艺、四季有别,浓而不腻,味感清鲜,讲究造型。
代表菜品:烤方、淮扬狮子头、叫花鸡、火烧马鞍桥、松鼠桂鱼、盐水鸭等。

徽菜
皖南的徽州菜是徽菜系的主要代表,起源于黄山麓下的歙县,即古代的徽州。后因新安江畔的屯溪小镇成为“祁红”、“屯绿”等名茶和徽墨、歙砚等土特产品的集散中心,饮食业发达,徽菜的重点逐渐转移到屯溪,在这里得到进一步发展。
特色:以烹制山珍野味著称,擅长烧、炖、蒸,而少爆炒。其烹饪芡大、油重、色浓、朴素实惠。
代表菜品:红烧果子狸、火腿炖甲鱼、雪冬烧山鸡、符离集烧鸡、蜂窝豆腐、无为熏鸭等。
