《食品分析》课程“以学生为主体”,培养学生应用和创新能力,“以社会需求为导向、以创新精神及实践能力培养为重点”。在课程内容上,包括样品前处理技术、食品的一般成分分析、食品添加剂分析检测、食品中有害有毒物质分析检测、水产品新鲜度检测和食品安全快速检测技术。使学生了解现代食品理化检验学科的现状及发展方向,理解食品一般理化指标检验方法的基本原理,掌握各项理化指标的分析数据的处理方法及结果的表示,掌握食品理化检验的样品采集、制备和预处理的方法和技术。
通过本课程的学习,你将学会:样品采集和前处理、理化分析方法、数据处理和结果表达与评价等全过程的食品分析内容。学会食品分析的基本原理及实验技能,了解现代食品理化检验学科的现状及发展方向。
本课程适合高等院校食品类相关专业的学生,也适合食品质量和安全检测部门,和食品与化妆品行业的社会学习者。

研究领域包括色谱-质谱联用技术、重金属稳定同位素标记技术、分子印迹技术、核酸适配体技术和纳米技术等,主要针对食品中重金属、农兽药残留、生物毒素和水产品新鲜度等开展快速检测方法的基础和应用研究。
先后主持国家自然科学基金、福建省科技计划重点项目、福建省自然科学基金及厦门市科技项目等10余项。迄今已在国内外核心刊物上发表研究论文160余篇,其中SCI收录近70篇。
