Mr.Smith,follow me please.Here we’re going to explore all the different aspects of Sichuan cuisine.This is Classic Collection Hall.This hall exhibits Sichuan cuisine culture by cultural relics,ancient books,records,and pictures.Here you can learn nearly everything about Sichuan cuisine culture.

Joe:It’s really special! Sichuan Cuisine really has a long history.

Cheng Yu:Yes,food and culture are linked.This way please.This is Interactive Demonstration Hall.This hall demonstrates cutting skills,durations and degrees of heating,and cooking process of Sichuan cuisine.

Joe:Ooh! I love this part! I can have such a close view of the entire cooking process.

Cheng Yu:Do you want to make your own dishes? There’s no better way to know more about a cuisine than learning how to cook it yourself.

Cheng Yu:Hotpot is the most famous and favorite dish in Chongqing.Long long ago,in order to save time,the porters working at the harbor boiled various kinds of food in big pot and added some chilli pepper and spices to ward off the cold.Finally,it becomes hot pot.

Joe:Why do Chongqing and Sichuan people especially like hot pot?

Cheng Yu:Because Chongqing and Sichuan has high humidity and many rainy or overcast days.Hot pepper and Sichuan pepper help reduce internal dampness and good for health.

Joe:This red side looks very spicy.What does white side taste like?

Cheng Yu:The traditional hot pot is only spicy.Today we specially ordered the combo pot.This side is not spicy.You can choose according to your own needs.Can you eat spicy food?

Joe:I love spicy food,so I’ll try the red side.OK,what’s next?

Cheng Yu:Choose the soup first,then choose the ingredients.Do you have any taboos?

Joe:I am allergic to fish and some shells.

Cheng Yu:OK,I suggest you try these sliced pork,beef and mutton.

Cheng Yu:These are made by tofu,and those are vegetables.

Joe:I do love Chinese cuisine,but Chinese food in U.S.is obviously not authentic.

Cheng Yu:Then you have to enjoy yourself today.Chinese food is divided into four major cuisines,Huaiyang cuisine,Shandong cuisine,Guangdong cuisine,and Sichuan cuisine.Sichuan cuisine is the most popular and ordinary one.

Joe:Is Sichuan cuisine always spicy?

Cheng Yu:Certainly not.Sichuan food is famous for its various flavors.Almost every dish has its own unique taste.For example,this dish,Dongpo elbow,which is famous for Su Dongpo,a literary giant of Song dynasty,is not spicy.In addition to chilli pepper,Sichuan cuisine has a very important seasoning,Sichuan pepper,which has the taste of numbness.You can try this dish,Mapo Tofu,with Sichuan pepper powder in it.

Joe:OK!

Cheng Yu:I remember you can eat spicy food,then you must try this dish,boiled beef,very typical Sichuan cuisine.

Joe:It looks delicious and really spicy.

Cheng Yu:And this specialty,Yuxiang Shredded Pork.

Joe:Is there any fish in it? I’m allergic to fish.

Cheng Yu:No,it’s pork.But it tastes like fish.

Just outside the temple,Steven Fuchier encounters a street vendor selling a tantalizing and hold some snack.

Caroline:Steven,in old days,every way you went to Chengdu,you’ll find all these snack sellers selling they call Xiao Chi (small eats),these favorite little local snacks.And I’m really excited to come across this one.Because this is the equipment carried by a traditional seller of flower bean curd,soaked bean curd,Douhua.And they always used to carry these black and red wooden barrels with Wu-lei Wu-lei yell that flavorings that bowls.In these days,they are quite hard to find.This is soaked bean curd,that’s Tofu that’s not been pressed.So,it’s really custard and light,melting in your mouth.It’s still warm with bean fresh made.

Caroline:What’s this?

Caroline:Soy sauce.Chili oil.You like chilli?

Steven:Of course,right?

Caroline:Yeah.Finely cut scallion.Deep fried soy beans.A bit crown of Sichuan pepper that let your lips dizzy.A little bit of sugar...So tender and slippy! Beautiful texture!

Steven:The texture is amazing and the oil against the onions.

Caroline:And all these crispy crunchiest things on top.

Steven:Fantastic!

Caroline:This is one of the real traditional old Chengdu snacks.In the past,there were so many of them,many of which come famous now,although you don’t see on the streets any longer like Dandan Noodles.And here were Zhong Shui Jiao,the wonderful spicy dumpling that we had with soy sauce,and garlic and chilli oil,and all kinds of delicious snacks.And part of these sounds of the old city of Chengdu.You walk around the street an you hear someone’s shouting out:“Douhua! Douhua! Dandan Mian! Dandan Mian! And so,it’s just so that you can lie back at the tea house and listen and hear what different sounds.Some people knocking out little tunes on a piece of metal.It makes me really nostalgic seeing this.

Steven:So you know the sounds and then you know the food.That’s fantastic.

Caroline:Yes.You went to leave out of your seat and rush to get a bowl of warm Douhua.

Steven:Very good.
