水晶饼是陕西传统名特糕点之一，已有800年的历史。中华人民共和国成立后，多次被国家商业部、陕西省商业厅授予优质产品称号。

西安的水晶饼采用面粉、冰糖、白糖、猪板油、橘饼、青红丝、糖玫瑰等优质原料精制而成，外形美观，晶莹透亮，层次分明，如同水晶，被誉为“秦点之首”，为中国名特糕点之一。该饼富含各种营养物质，油多而不腻，糖多而渗甜，具有浓郁的玫瑰香味。

相传北宋时期，有一年寇准从京都回到故乡探亲，适逢其50大寿，亲朋们送来寿桃、面花、寿匾，表示祝贺。为了酬谢大家的情意，寇准特设宴款待。酒过三巡，手下人捧进一个精致的盒子，寇准打开一看，里面装着50个晶莹透明、如同水晶石一般的点心，点心上面放着一张红纸，工整地写着一首诗：“公有水晶目，又有水晶心；能辨忠与奸，清白不染尘。”落款是“渭北老叟”。后来，寇准的家厨也仿照其样式做出了此种点心，寇准取名“水晶饼”，一直沿用至今。这种饼当时就很有名，曾与燕窝、银耳、京华火腿齐名。元代，水晶饼就已经远销到北京、天津等地。

大约在19世纪后期，水晶饼的制作技艺传入古城西安，由位于西大街南广济街口的德懋恭食品店引进继承，制作技艺不断改进提高，成为秦式糕点之首。

The Shuijing Pancake is traditional Shaanxi pastry bearing an 800－year history.It has been appraised as“high－quality food”by the National Business Ministry and the Shaanxi Provincial Business Department.

The pancakes are made from flour，rock candy，leaf－lard，tangerine cakes，green and red preserved fruit－slices and sweet roses.They are pretty in shape and transparent with distinctive layers. They look very much like real crystal，so they are regarded as the“No.1 Dessert”produced in Xi'an. They are listed in a recipe book entitled A Collection of Famous and Special Desserts in China.They are very nutritious，rich yet not greasy，though filled fully with sweetness，and give off a rich fragrance of roses.

Legend goes that in the Northern Song Dynasty，Kou Zhun，a famous official，once went back to his hometown from Beijing.It happened to be his 50th birthday，so his friends and relatives brought pea ches，steamed bread，and inscribed wooden boards for his birthday celebration.During the course of the banquet，a servant brought in an intricate wooden box in which Kou found 50 crystal－clear pancakes. The red paper sheet that covered the cakes read，“Penetrating are your eyes，and pure is your heart；being able to tell the loyal from the wicked，you are upright from the start.”The name of the sender was“an old man from Weibei”.Later，Kou's chef learned its cooking technique.The name Shuijing Pancake given by Kou is still used today.They share the same fame with the edible bird's nest，white wood fungus and Jinhua ham.In the Yuan Dynasty，such pancakes could be found in the markets of Bei jing and Tianjin.

In the late 19th century，the cooking technique was introduced to Xi'an.Demaogong Bakery in Xi'an gave it some improvements and made the pancakes the most favorite pastry among the people in Shaanxi Province.
