Curry powder is a seasoning mixture prepared from many processed spices, including turmeric, white ground pepper, cilantro, fennel seeds, cinnamon, dried ginger, anise and Sichuan pepper. The ingredients are ground into powder and blend together to make a yellow aromatic and spicy curry powder, it is also used in both Chinese and western cooking. It is especially well-liked in Southeast Asian countries.
Among different types of meat, chicken is most famous for its savory taste. To prepare the Red Wine Chicken dish, chunks of cleaned chicken are first seasoned with salt and pepper, and fried in a hot pan until slightly browned. Red wine and stock are then added over the chicken and brought to a boil. Heat are then reduced and the chicken is slowly simmered in a covered pot. Lastly, salt and pepper are added to taste, and the chicken is garnished with potatoes. After the sauce is poured over the chicken, the dish is served immediately.
