Trendy, Funky and Fabulous New Zhenjiang Restaurant

New Zhenjiang Restaurant, claimed as the new generation of Chuan-Yang cuisine, is located at the intersection of West Nangjing Road and Jiangning Road, a prestigious location in the western part of Shanghai where many first-class cenral commercial buildings are standing nearby and the streets are always filled with bustling crowds and excitement.
First established in 1927, New Zhenjiang Restaurant used to be called Zhenjiang Snack Shop, a tiny eatery that only occupied two units. It mainly served Huai-Yang Style dishes and snacks, such as Xiaolong Buns, Salted Pork Noodles, Date Pudding, Multiple Layer Oil Cake, Bean Curd Shreds with Dried Shrimp and etc. Because of the freshness of the ingredients, meticulous preparation and distinct flavors, the restaurant attracted a lot of customers and earned great popularity among the city residences. At that time, many entertainment businesses were located in the area, especially the popular Majestic Movie Theater. Right after the movies, many people came to Zhengjiang Snack Shop for food.
After 1990, Zhenjiang Restaurant soared to new heights. It underwent a grand-scale renovation and expansion project which involved relocating 23 households living on the 3rd and 4th floor. The operating area was increased from 165 square meters to 2000 square meters. The restaurant also invited renowned Chinese artist Mr. Zhu Qizhan, who was 100 years old at the time, to write the signboard which stated "The Great Shanghai New Zhenjiang Restaurant". Featuring the new generation of Chuan-Yang cuisine, the restaurant incorporated the characteristics of the Yang cuisine which places great emphasis on retaining the natural flavors and making flavorful light tasting soups. Meanwhile, the restaurant applied the fine points of Cantonese Cuisine by using fresh ingredients, and mastering the cooking temperature and other cooking techniques such as stewing, steaming, quick-frying and stir-frying. Overall, the restaurant highlighted the essence of the contemporary Chinese foods and also invented unique gourmet dishes to add new charms to the traditional Chuan-Yang cuisine. The restaurant was expanded to carry over one hundred types of food, and it also created many food products series and seasonal foods such as mackerel fish products, crab meat foods, winter season health food products, Spring Festival "reunion dinner" and more. The distinct taste and exceptional quality of the products have earned the restaurant great popularity.
In 2002, New Zhenjiang Restaurant was renovated for the second time. A row of French windows were installed by the street-side, the patrons could look out the windows to watch the people's Square and Westgate Mall in the distance, and also see the lively Jiangning Road. The dining hall was decorated with a theme blending simple western design with some Chinese art elements, achieving an overall result of being elegant yet contemporary and edgy. The restaurant also boldly revolutionized cooking methods without being strictly bound to the culinary traditions. Based on the practice of scrupulous preparation of Huai-Yang dishes, the chefs learned from Cantonese cuisine's characters of pure flavor, light-tasting and preserving the natural essence of the ingredients by using a wide range of fresh ingredients. The new innovative signature dish "Zhengjiang Aromatic Chicken" is a case in point. It is prepared with a chicken that has been marinated in a special sauce. The resulting chicken does not have a slight bit of greasy taste. The entire chicken is chopped into pieces which are then neatly arranged into an interesting pose. With the other pieces being spread out on the platter, the chicken head is erected in an upright position and the two wings are placed upward, like the open wings of a little flying angel. The modernistic "theatrical" presentation of this chicken dish has attracted many young customers. If you look around, you can see the "little angels" are almost on every table. After eating, althougly the "wing-lifting" launch pose is no longer there, you can still smell the subtle aroma of the Aromatic Chicken lingering in the air.

Zhengjiang Aromatic Chicken 镇江骨香鸡
This is the signature dish of New Zhenjiang Restaurant. It uses free-run hens from Kun Shan farm in Jiangsu Province. After cleaning, the hen is quick-boiled in water to tighten the skin. When it is still warm, the chicken is soaked in a special Chinese herb briny sauce and marinated for 3 hours. Afterwards, the chicken is hung out to dry. Finally it is chopped into pieces and served on a platter.
Glistening and golden, the Aromatic Chicken has crispy skin and tender meat with a subtle fragrance. This dish has the health benefits of restoring vital energy and nourishing bone marrow. It was awarded the honorable title of "Famous Shanghai Dish".

Fried Crab Meat Wrap 清炒蟹粉夹饼
Pancakes are commonly served with Salted Pork, Roasted Duck Meat and Twice-cooked Pork. However, the chefs at Xinzhengjiang Restaurant have added an innovative touch to the menu by creating Fried Crab Meat Wrapped in flat-bread. Crab meat is picked out from the crab and then cooked. The flat-bread served in this dish is made with leavened dough that has been folded into small "envelopes". It bears a resemblance to pita bread, but softer in texture and particularly delicious with the crab meat fillings. Sweet, savory and delectable, the extraordinary sensation of a mouthful of crab meat can only be described through the verses of a poem from the Dream of Red Chamber, which can be translated as: "Its (crab) pincers packed with meat like tender jade. Its shell bulging with red, tasty roe."

Fruit Platter (Supreme Buddha Temptation)

Originally a well-known dish from Fujian Province, Supreme Buddha Temptation is famous for its well-balanced flavor of sweetness and saltiness. Today, it has been brilliantly transformed into a dessert by the wondrous chefs at New Zhenjiang Restaurant.
The ingredients consist of mango seed, fig, cheery, loquat, Chinese pear, olive, fresh Longan, rambutan and more. Mango seed is known for its effect of nourishing stomach, relieving nausea, helping urination and reducing thirst. Fig strengthens the digestive tract, reduces phlegm and nourishes Yin. Cheery promotes vital energy, nourishes the stomach and spleen, and also relieves excess gas and diarrhea. The loquat is believed to moisturize lungs, relieve cough and nourish liver. Pear has good detoxifying effect and also relieves dryness. Olive is a fruit that cleanses lungs, nourishes stomach and decreases phlegm production. The fresh Longyan has the wonderful benefit of promoting vital energy, calming the mind and nourishing the heart. Rambutan is another fruit that protects the stomach, strengthspleen, moisturizes the lungs and reduces phlegm. After cleaning, the mango seed is first boiled to make soup, and the assorted fruits are cut into small pieces and put into the soup. After adding Rock Sugar, the soup is simmered until the flavors are developed fully. The final product is a dessert that tastes moderately sweet, and has a dazzling color and an alluring fragrance.

Stir-fried Conch with Asparagus and Strawberry

Lobster in Chicken Wing Soup 翅汤小青龙
This dish uses lobster weights about 350g. First take out the lobster meat, then cook it in a soup stock prepared from shark bones, chicken and smoked ham.
