3.熟悉清蒸技法、干蒸技法、粉蒸技法、蒸扣技法、蒸瓤技法、蒸炖技法的定义。
3. Know well definitions of steaming technique, dry steaming technique, steaming with flour technique, bowl steaming technique, stuffing steaming technique and Technique of Steaming and Stewing
4.掌握各种常见汽烹技法的操作要求。

5.掌握各种常见汽烹技法的代表菜肴的制作工艺。

1.能够根据汽烹类技法中的不同技法进行刀工处理。
1. Ability to carry out knife processing according to different Air Cooking Techniques.
2.能够根据不同汽烹菜肴的质量标准与原料性质进行初熟处理。
2. Ability to make pre-cooking according to the quality standards and ingredient properties of different air-cooked dishes.
3.能够制作汽烹类技法“实训示例”菜品,且工艺流程与制作基本步骤符合标准。
3. Ability to make “Training Examples” dishes under Air Cooking Techniques, while the process flow and the basic production steps meet the standards.
4.通过对汽烹类技法中的“实训示例”菜品的深入实训与知识的学习,能举一反三设计2道以上的同种技法的菜品,并能较好的进行烹调。
4. Ability to design and make at least two dishes under Air Cooking Techniques through the learning of relevant knowledge and the in-depth training of “Training Example” dishes under Air Cooking Techniques, and cook in a satisfactory style.
