一、中餐烹调的内涵/Connotation of Chinese cooking
(一)烹饪与烹调/Cooking and cook (dishes)
“烹饪”是一个专门用制作熟食品的专业术语。“烹”是指加热、煮的意思。“饪”是指将食物加工制熟。“烹饪”二字合用,就是指对食物原料进行合理选择调配,加工治净,加热调味,使之成为色、香、味、形、质、营养兼美的、安全无害的、利于吸收、益人健康、强人体质的主副食品包括调味熟食,也包括调制生食。
