Make the Spicy Chicken Wings 做辣翅
Roger : We are going to make some spicy chicken wings first.
Eric: I remember I have put them on the counter already.
Roger: Good! Preheat the oven to 200 degrees Fahrenheit. Put two baking sheets with aluminum foils on the roasting tray and grease with some oil.
Eric: Ok, the roasting tray is ready.
Roger: Put the chicken wings in a large mixing bowl. Season them with salt, pepper, and hot sauce. Then add some vegetable oil, toss to coat.
Eric: What’s next?
Roger: Put the flour and wings in a large, food-safe plastic bag. Hold the bag closed tightly and shake to coat the wings entirely with the flour. Arrange the wings on the prepared baking sheets, making sure none of the pieces are touching one another.
Eric: Ok, shall I put them into the oven now?
Roger: Yes! Pop them into the preheated oven for 30 minutes. Then turn over all the wings and continue to cook them for another 30 minutes.
Eric: Ok, shall I make the sauce now?
Roger: Yes, blend the chopped garlic, ginger, chili paste, rice vinegar, brown sugar, and soy sauce together in a saucepan. Bring the mixture to a boil and immediately remove from heat.Put about half the wings in a large bowl.

Eric: The chicken wings are ready. Shall I baste the wings with the sauce?
Roger: Pour the sauce over the wings. Then move them to a tray and wait for about 5 minutes to allow the sauce to soak into the wings before serving.
