要点:

Four stages to make green tea

绿茶制作主要有4个步骤。

Stage  1   tea-harvesting 

第一步  采茶叶

There are three points for picking leaves. First, we pick fresh tea leaves.Second, we choose the leaves which are one bud with one leaf”. The bud with more than two leaves is not suitable for making green tea.Third, we break the leaves instead of pinching them. 

采茶叶有三点要注意的。第一、采摘新鲜的茶叶;第二、采摘“一芽一叶”的最佳。多于“一芽两叶”的就不适合制作绿茶了。第三、采摘茶叶不能掐,只能掰。

Stage 2   tea-frying    

第二步:杀青

Is tea-frying necessary?杀青是必须的吗?

 The purpose of tea-frying is to use high temperature to inactivate the enzyme activity in the fresh leaves, dissipates the green odor, soften the leaves for the following  fixation.

杀青的目的是利用高温来钝化鲜叶中酶的活性,

散去青臭气,蒸发一部分水分,柔软叶质,有利于揉捻成形。

Stage 3  tea-rolling

第三步:揉捻

Why we do this step?为什么要揉捻呢?

Rolling  process is essential. This stage is to roll the tea leaves to  a certain shape. By destroying the cell tissue of the leaves,  part of the tea juice flows out and attaches to the surface of the tea strips, making the tea easier to brew afterwards.

揉捻是很关键的一个步骤。通过揉捻,形成条索;适当破坏杀青叶的 叶细胞组织,部分茶汁流出附于茶条表面,以便茶更易冲泡。

Stage 4  tea-drying

第四步:茶叶干燥

What s purpose of drying?干燥的目的是什么?

The purpose of drying: One is to further remove the moisture in the tea, so that the moisture content of the tea can meet the standard requirements for storage. The second is to fix the shape and color, develop the aroma and taste, and form the unique color, aroma, taste, shape and quality characteristics of green tea.

一是进一步去除茶叶中的水分,使成茶的含水率达到标准要求,以便贮存。二是固定外形、色泽,发展香气和滋味,形成绿茶特有的色、香、味、形品质特征。
